Apple Cinnamon rolls

Salam,

Another baking weekend, and another cinnamon rolls episode for tea. This time I made apple cinnamon rolls. The apple filling is like the filling for apple pie.



ohhh sedap betul yang ini, bau harum apple with cinnamon satu rumah. Itu pasal sey suke baking, terutama kalau baking anything with chocolate and cinnamon. Love the cinnamon smell. So refreshing. Love the cocoa smell, so enticing.

Granny smith apple kecik pulak.... but ok, masam.


Kita buat filling dulu. I used 5 apple (diced), 1 cup of brown sugar, 5 tbs (50gm) of butter and 1 tbs of cinnamon. And a pinch of salt. Salt kena ada, baru rasa.


Tips; make sure your filling is sticky and not runny. Kalau tak nanti dough soggy and lembik. Like my first time nie, jadi messy and crooked pulak.


Messy yes, tapi masih ada that rose shape. Ok lah.... 




Tadaaaa...... anak-anak suka. I glazed with just plain vanilla frosting. No cream cheese this time sebab ini pun dah manis dan heavy.

Chocolate Cinnamon Rolls

Salam,

Making cinnamon rolls again. This time I tried a chocolate flavour. 




                                               






Still use the blue jeans recipe. Here what I have added:

1. 50gm or 1/2 cup of cocoa powder in the flour mixture before kneading.
2. 1 cup (175gm) of choc chips into the filling.
3. 25gm or 1/4 cup of cocoa powder in the frosting mixture.


Ooolalalala..

So now I have made 3 flavours:

1. The original with cream cheese glaze.
2. Chocolate oreo cinnamon rolls.
3. Chocolate cinnamon rolls.

Chocolate Oreo Cinnamon Roll

Salam,

Dah jadi macam rutin pulak buat cinnamon roll nie. Pulak tu anak-anak suke, my other half suka, dan buatnye pun Alhamdulillah mudah. Kawan-kawan ada yang order pulak tu....hahahah... tak tau la camne sey nak meniaga nie. Tapi kalau ada makan-makan esok boleh je sey buat, makan ramai-ramai, gemuk ramai-ramai.

Kalinie sey cuba perisa lain pulak, sey buat Chocolate Oreo Cinnamon Roll. Sey cakap dengan miss y tadi, kalau mama jumpe oreo crush then kite boleh cuba resepi baharu. Kalau dah rezeki budak-budak nie tak ke mana kan, bertemu jodoh juga dengan oreo crush. Makanya, terjadi lah Chocolate Oreo Cinnamon Roll untuk minum petang tadi.










Sey guna resepi yang sama, baca sini, cuma tambah:

1. 50gm atau 1/2 cawan crush oreo, masukkan dalam adunan doh yang telah bentuk dalam standing mixer. Kiranya bahan yang lastlah masa proses nguli.
2. 50gm atau 1/2 cawan crush oreo dalam filling + 2 tbsp dark cocoa poweder. 
3. Taburkan atas glaze (sey guna cream cheese frosting) sebelum hidang.

Walaaaaaa....

Lepas nie nak cuba chocolate cinnamon roll pulak.

I made cinnamon roll with cream cheese frosting

Salam,

Sudah lama sey teringin nak buat cinnamon roll. Terpikat sebab cara membuat dia macam senang je. Sebagai persediaan nak membuat, sey dah beli silicone mat, masa tu sey fikirkan nak uli perlu ada lapik dan cutter, kalau pakai pisau biasa takut melekat. Sey biasa dah buat donut, pakai pisau biasa aje nak potong, hasilnya doh jadi penyek. Lepas tu sey cari resepi cinnamon yang mudah, foolproof dan yang penting, uli pakai mixer. Musim berguru membuat roti dengan sifu lebih 7 tahun yang lalu membuktikan, sey tak larat kalau nak knead tepung roti nie...hahahaha... mujur sey dah ada standmixer yang durable dan boleh menguli dengan steadynya.

Tadaaa.... cinnamon roll with cream cheese frosting untuk minum petang tadi.


So kisahnye, petang tadi, ehhhh... tengahari tadi, sebelum zuhur sey dah mula prep bahan. Mula-mula nak pastikan yis sey sihat walafiat dahulu...hahahaha...maksud sey, yis tak mati, so sey siapkan yis. Bila nampak foamy, baru sey teruskan dengan bahan-bahan lain. And the rest.....maka jadilah cinnamon roll.


Nie doh dah naik 2 kali ganda.

Untuk resepi, sey follow resepi dari video tutorial nie.

Cinnamon Rolls with Cream Cheese Glaze (by Chef Meredith Laurence)
Serves 12 
Ingredients: 
1 recipe Cinnamon Roll Dough (see below), or 1 to 2 pounds frozen bread dough
¼ cup butter, melted and cooled 
¾ cup brown sugar 
1½ tablespoons ground cinnamon

Cream Cheese Glaze: 
4 ounces cream cheese, softened 
2 tablespoons butter, softened 
1¼ cups powdered sugar 
½ teaspoon vanilla

Directions: 
1. Let the dough come to room temperature on the counter. On a lightly floured surface roll the dough into a 16-inch by 13-inch rectangle. Position the rectangle so the shorter 13-inch side is facing you. Brush the melted butter over the dough, leaving a 1-inch border uncovered along the edge farthest away from you. 

2. Combine the brown sugar and cinnamon in a small bowl. Sprinkle the mixture evenly over the buttered dough, keeping the 1-inch border uncovered. Roll the dough into a log starting with the edge closest to you. Roll the dough tightly, making sure to roll evenly and push out any air pockets. When you get to the uncovered edge of the dough, press the dough onto the roll to seal it together. 

3. Cut the log of dough into 12 pieces, slicing slowly with a sawing motion so you don’t flatten the dough. Turn the slices on their sides on a greased and lined (with silicone or parchment) 9” x 13” sheet pan and cover with a clean kitchen towel. Let the rolls sit in the warmest part of your kitchen for an hour to rise. 

4. To make the glaze, place the cream cheese and butter in a microwave-safe bowl. Soften the mixture in the microwave for 30 seconds at a time until it is easy to stir. Gradually add the powdered sugar and stir to combine. Add the vanilla extract and whisk until smooth. Set aside. 

Air-Fryer Directions: 
5. When the rolls have risen, pre-heat the air fryer to 350ºF. Transfer 6 of the rolls to the air fryer basket. Air-fry for 5 minutes. Turn the rolls over and air-fry for another 4 minutes. Repeat with the remaining rolls. 

Oven Baking Directions: 
5. Pre-heat the oven to 375ºF. Transfer the sheet pan to the oven and bake the rolls for 25 – 30 minutes, or until lightly browned. Cover with foil if the rolls start to get too brown. 

6. Let the rolls cool for a couple of minutes before glazing. Spread large dollops of cream cheese glaze on top of the warm cinnamon rolls, allowing some of the glaze to drip down the side of the rolls. Serve warm and enjoy!

Cinnamon Roll Dough 

Ingredients:
½ cup milk 
2¼ teaspoons active dry yeast 
¼ cup sugar 
4 tablespoons butter, melted and cooled 
1 egg yolk 
1½ teaspoons vanilla extract 
3½ cups all-purpose flour ¾ teaspoon salt

Directions: 
1. Warm the milk and ½ cup of water to take the chill off. Bring the liquid to roughly 100ºF. Sprinkle the yeast on top with a pinch or two of the sugar. Let the yeast “proof” and foam. This will prove that the yeast is indeed active. If there is no foaming, you will need to start again with new yeast. 

2. Add the melted (and cooled) butter, the egg and the vanilla to the yeast mixture. 

3. Combine the flour, sugar and salt in the bowl of a stand mixer. With the mixer working with the dough hook attachment, poor in the yeast mixture until a sticky soft dough forms. Let the stand mixer knead the dough for about 5 to 10 minutes or until it is soft and elastic. 

4. Shape the dough into a ball and let it rest, covered with plastic wrap, until it has doubled in size (about one hour). You can use the dough at this stage if you’re in a hurry. Punch the dough down and follow the recipe for Cinnamon Rolls. For enhanced flavor, however, punch the dough down, knead it back into a ball and return it to the bowl. This will re-distribute the yeast in the dough. Cover the dough again with plastic wrap and let it rise for a second time. You could do all these steps a day ahead of time and let the second rise take place in the refrigerator.


I am happy with how it turned out, the recipe is a keeper definitely. Cuma sey kurangkan sukatan gula untuk frosting, pakai 3/4 cawan aje. Miss t, and miss y ate a lot. Lepas nie boleh cuba perisa lain pulak.

Kek cokelat pisang, kek kluster kayangan katanya

Salam,

Hari minggu datang lagi. Hari minggu ini bersemangat untuk mencuba resepi kek baharu. Kek pisang memang kegemaran seisi rumah. My other half kalau makan kek pisang, dia nak kek yang ada raisin dan cinnamon sedikit. Miss y dan miss t memang tak cerewet bab kek ini, kecuali kek santan burnt cheesecake yang buat kelmarin. Nampaknye resepi tu not a keeper lah.

So harinie sey cuba baking kek pisang cokelat kluster kayangan nie. Asyik lalu lalang aje kat wall FB sey. Ada sorang sahabat sey nie, dia terima tempahan kek ini, jadi hampir tiap-tiap hari dia share post tentang kek ini. Boleh tahan juga order dia dapat sekarang nie. Sey pun tak boleh tahan, nak order jauh. Kita buat sendiri dulu lorrrr.... 

OK mula-mula kita study resepi dulu. Sey nak resepi yang mudah, taknak bahan-bahan yang fancy. Dan kalau boleh nak sukatan yang mudah juga. Jadi, sey pun cubalah resepi buatoranglapo nie.... ohhh ada buttermilk rupenya, eggless resepi tapi ada buttermilk. Patutlah haritu ada colleague sey tanya, macammana nak buat buttermilk. Lama dah maghin, masa PKP first wave. Kek ni viral masa tu lah. Sey tanya nak buat apa dengan buttermilk, red velvel ke? Sebab saya hanya guna buttermilk sama ada untuk red velvet atau pancake. Kawan sey ada cakap untuk kek pisang kayang nie. Tapi masa tu sey tak bernafsulah nak ambil tahu hahahahaha. Tapi dua tiga minggu, semenjak PKPB nie, asyik lalu aje feed tentang kek pisang viral nie, sey pun, tak boleh jadi nie.

Semalam masa keluar cari bahan-bahan, sey cadang nak beli aje buttermilk. Tapi puas sey tawaf kat depan chiller supermarket, tak muncul-muncul juga buttermilk. Last-last sey pun buat aje lah sendiri. Tak payah risau, dalam resepi buatoranglapo tu ada cara-cara nak buat buttermilk.








Resepi nie takde telur, jadi sesuai untuk orang yang ada alahan telur. Kenapa panggil dia kluster kayangan, sebab pakai cokelat mahal. Tapi sey pakai hershey's aje, tak pakai callebaut, itupun nak habiskan hershey's. Dah tak nampak cokelat hershey's kat JG dah, alahai. Sey suka cokelat hershey's nie. Lepas tu sey pakai walnut, tak pakai almond sebab almond hiris takde. Tapi lagi sedap pakai walnut lagi. Verdict, resepi nie a keeper. Ramai pulak yang minta sey kek nie. PKPB nie, kita jamu mata ajelah dulu ye.

Santan pandan burnt cheesecake

Salam,

Asyik lalu aje post si Limau Nipis. Dia buat santan pandan burnt cheesecake haaa.... sey pun teruja lah nak cuba. Makanya....






Rasanya macam kuih bakar yang ada cheese....heheheheh...tapi my other half tak suke pulak. Yela rasa susu, santan dan pandan kan. Mungkin tak buat lagi lah, sebab tak laku kat rumah.

Kek batik milo

Salam,

Dah lama miss t mintak buatkan kek batik. Awalnye rancang nak buat masa raya haji maghin. Tapi oleh kerana ada permintaan sour cream butter cake dan kek marble jelita untuk dijamu semasa raya haji maghin, jadi kita tangguh dulu permintaan miss t. Harinie akhirnya berjaya juga buat kek batik. Sey ajar miss t buat, sey supervise aje, biar dia pandai buat, lepas nie takdo lah dia minta sey buek an lai. Boleh yo dio buek kan.....





Resepi kek batik nie kawan sey yang bagi. Lama dah, masa zamn universiti dulu. Semenjak sey dapat resepi nie, selalu juga sey buat, dan orang pun suka pulak dengan kek batik buatan sey nie. Chewahhhh...maka jadilah kek yang kerap sey buat, eh boleh panggil kek ko....heheheheh....

Kalau sey buat carian santai kat en gugle tu, ada gak kek omputih mirip kek batik nie. Diorang panggil biscuits layer cake, something like that. 

Sey teringin juga nak buat kek batik indulgence, atau kek batik with chocolate fudge. Tapi bahan-bahan tak cukup pulak harinie.

I made taisan cake, it's Filipino sponge cake

Salam,

Hari minggu hari baking. My initial plan is to laze with my book. Tapi malam tadi anak-anak tanya, mama, what are you baking tomorrow? Aduhhhhhh...

Sebenarnye sey ada hutang dengan miss t, kek batik. Hahahaha dah lame dia mintak dari raye haji maghin. Sey lah yg malasnye. Bahan-bahan dah ada, tak terbuatnye lagi. Miss t siap cakap, mama jangan risau kalau tak habis, adik bawa gi sekolah nanti. Ye lah nak... Nanti mama buat.

Tapi harinie bukan kek batik dibuatnye, kek span Filipino jadinye. Taisan cake. First time and jadi.
